Istanbul's first pure vegetarian restaurant opened its pristine doors at the cusp of the new year. Pure or saf in Turkish, in this case means organic, vegan and raw. A concept allready established in America (in fact, Saf's owner and chef Chad Sarno is American), the idea behind the raw diet is not to cook any ingredient above the magic number of 48 °C so tat all nutrients, namely enzymes, remain intact. |

Walking into the Saf (pure) Restaurant in Tünel, Beyoğlu one feels an air of lightness and ease. Perhaps it's due to the cozy, welcoming atmosphere or that it is Istanbul's first organic, vegan bistro and wine & martini bar. Or it might also be the fact that the entire bistro is a smoke free environment. |
